Lamb Chops with Asparagus

For ~ 4


  • 4 pieces of lamb shoulder chops (each about 1 inch thick)
  • 1 cup of red wine (Zinfandel was used)
  • 1 1/2 tbsp of butter (garlic & herb butter was used)
  • 1/2 tbsp of flour
  • 1/2 tbsp of vegetable oil
  • salt and pepper to season
  • asparagus spears (ends trimmed)
  • 1 tbsp of grated Parmesan cheese


  1. Season the lamb chops with salt and pepper
  2. Preheat a heavy skillet or cast iron pan on high for searing
  3. Spray the heated pan with oil spray or add in 1/2 tbsp of vegetable oil, just enough to coat the entire surface of the pan evenly
  4. Place the lamb chops in the pan, sear each side for about 3 minutes to achieve medium rare
  5. When the lamb chops are ready, deglaze the pan with 1 cup of red wine
  6. Add in 1 1/2 tbsp butter and 1/2 tbsp flour, stir well
  7. Turn off the heat, strain the sauce to get rid of any impurity/fat/scrap
  8. Pour the sauce over the lamb chops
  9. Grill the asparagus spears for about 3 minutes on each side at medium high heat, drizzle with grated Parmesan cheese while hot
  10. Bon appΓ©tit! ;)

Serving suggestions:Β  RED WINE (whatever you made the sauce with)!!!!!! mashed potatoes, rice, spaghetti, bread (rosemary focaccia was served) …

DEGLAZE – using added liquid to dissolve cooking juices or solid food in a pan while stirring

NOTES: Timing may vary due toΒ  different thickness of meat cut and asparagus. Remember not to crowd the meat or asparagus when cooking for even heating. Amount of oil might differ as well due to pan size differences. Very little oil is needed for searing, just enough to coat the surface. Quick and easy to make and surprisingly delicious πŸ™‚ Cheers to the beginning of 2010 Winter Olympics!!!!!!!

      I think I am more impressed than they are, haha. And they are happy that I have a new interest but slightly annoyed that I am buying more stuff, hence taking up ‘their’ spaces πŸ˜›

    Instead of putting oil on the pan you can put oil on the meat. That way there is no extra oil burning in the pan.
